Refrigerator Cucumber Salad

INGREDIENTS:

  • 4 thinly sliced cucumbers
  • 1-large sliced red onions
  • 1-large sliced green bell peppers
  • 1-tbsp salt
  • 2-cup white vinegar
  • 1 1/2-cups sugar
  • 1-tsp celery flakes
  • 1-tsp red pepper flakes

INSTRUCTIONS:

  1. In a large bowl, combine the sliced cucumbers, onions, peppers, and salt. Set the mixture aside.
  2. In a pot, combine the vinegar, sugar, celery flakes, and pepper flakes. Bring this mixture to a boil. Once it reaches a boil, remove it from the heat and add two handfuls of ice to the pot, stirring until the ice melts and the mixture cools down.
  3. Place all the prepared vegetables in large-mouth canning jars. You can use either 2-quart jars or 1 half-gallon jar.
  4. Pour the vinegar and spice mixture over the cucumbers, making sure they are fully submerged.
  5. Seal the jars and store them in the refrigerator.
  6. Your pickled vegetable mixture will stay fresh for up to 2 months.
