Refrigerator Cucumber Salad

INGREDIENTS:
- 4 thinly sliced cucumbers
- 1-large sliced red onions
- 1-large sliced green bell peppers
- 1-tbsp salt
- 2-cup white vinegar
- 1 1/2-cups sugar
- 1-tsp celery flakes
- 1-tsp red pepper flakes
INSTRUCTIONS:
- In a large bowl, combine the sliced cucumbers, onions, peppers, and salt. Set the mixture aside.
- In a pot, combine the vinegar, sugar, celery flakes, and pepper flakes. Bring this mixture to a boil. Once it reaches a boil, remove it from the heat and add two handfuls of ice to the pot, stirring until the ice melts and the mixture cools down.
- Place all the prepared vegetables in large-mouth canning jars. You can use either 2-quart jars or 1 half-gallon jar.
- Pour the vinegar and spice mixture over the cucumbers, making sure they are fully submerged.
- Seal the jars and store them in the refrigerator.
- Your pickled vegetable mixture will stay fresh for up to 2 months.
