Pioneer Pecan Pie (No Corn Syrup!)
“Pioneer Pecan Pie is a testament to the enduring appeal of simple, honest ingredients coming together to create something truly wonderful”
INGREDIENTS:
- 1 pie crust, homemade or store-bought (plus extra dough for decorating, optional)
- 1 1/2 cups brown sugar
- 1/2 cup white sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, melted and browned (optional)
- 3 large eggs
- 1 1/2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/2 tablespoons heavy cream
- 2 teaspoons vanilla extract
- 2 cups pecans, plus extra for garnish
INSTRUCTIONS:
- Preheat your oven to 375°F. Roll out your pie crust into a circle large enough to fit your chosen pan (springform, tart, or pie dish) – approximately 12 to 13 inches in diameter. Ensure it covers the bottom and sides of the pan, and trim any excess dough.
- If desired, you can create decorative pie dough designs like flowers or other shapes to adorn the crust later. Place the prepared pie dish in the refrigerator until it’s ready to be filled.
- In a large mixing bowl, start by beating the eggs until they become foamy and develop a fluffy texture. Then, incorporate the browned butter into the beaten eggs.
- Once thoroughly combined, add both brown and white sugar, continuing to beat until the sugar granules are dissolved.
- Sprinkle in the flour, cinnamon, and salt. Stir to ensure these dry ingredients are well integrated into the mixture.
- Pour in the heavy cream and add the vanilla extract. Stir until everything is fully combined.
- Fold in the pecans, ensuring they are evenly distributed within the filling mixture.
- Carefully pour the prepared mixture into the pie crust you’ve set aside. You can now decorate the pie crust with any pecans or cutouts you’ve created earlier.
- Place the pie dish in your preheated oven. Bake for approximately 40-50 minutes, or until the center is no longer jiggly and has set.
- After baking, remove the pie from the oven and allow it to cool completely before serving.
