Peach Cobbler Egg Rolls

INGREDIENTS:

  • 12 egg roll wraps
  • 2 1/4 cups fresh peaches 3 peaches
  • 1/4 cup white granulated sugar
  • 1/4 cup water
  • 1 tbsp corn starch
  • 2 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 egg beaten
  • 2 tbsp butter melted
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon

Ingredients for Homemade Vanilla Icing

  • 1 cup confectioner’s sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

INSTRUCTIONS:

  1. Start by peeling your fresh peaches. On a cutting board, slice and dice your peaches.
  2. In a small bowl, add cornstarch and water. Whisk to break up any lumps.
  3. In a saucepan over medium heat, add diced peaches, white granulated sugar, water mixed with cornstarch, and lemon juice. Stir and cook until the peach mixture thickens and becomes bubbly. Remove from heat and add vanilla extract.
  4. Beat the egg in a small bowl.
  5. Melt butter in a microwave-safe bowl.
  6. In a separate bowl, prepare cinnamon sugar by adding brown sugar and cinnamon, mixing well.
  7. Prepare egg roll wraps. Add 2 tbsp of the peach mixture into 1 egg roll wrap in the center. Brush beaten egg on the corners of the egg roll wraps to ensure they seal well. Fold the egg roll wraps according to the instructions on the package.
  8. Dip the finished egg rolls into melted butter first. Then, immediately roll them into the sugar and cinnamon mixture, ensuring they are completely coated.
  9. Place the peach cobbler egg rolls on a parchment paper-lined baking sheet. Bake in a preheated 400°F oven for 20 minutes or until golden brown, flipping them over halfway.
  10. Top them off with homemade vanilla icing and powdered sugar if desired.

How to Make Homemade Vanilla Icing:

  1. In a saucepan over medium heat, combine confectioner’s sugar, milk, and vanilla extract.
  2. Stir for 1-2 minutes or until well combined.
  3. Drizzle your homemade vanilla icing over your peach cobbler egg rolls.
