INGREDIENTS:

  • 4 C. water
  • 4 C. raisins
  • 1 C. light brown sugar
  • 5 T. cornstarch
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 tsp. lemon juice
  • 3 T. butter (not margarine)
  • 1 tsp. vanilla extract
  • 2, 9″ deep dish pie shells

INSTRUCTIONS:

Step 1: Prepare the Raisin Filling

  1. In a medium-sized pot, combine the 2 cups of raisins and 2 cups of water.
  2. Bring the mixture to a boil over medium heat and cook for about 5 minutes.

Step 2: Prepare the Syrup

  1. In a separate bowl, blend together 1 cup of brown sugar, 2 tablespoons of cornstarch, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt.
  2. Slowly stir this dry mixture into the hot raisins and water.
  3. Continue to cook and stir the mixture until the syrup thickens. This should happen quite quickly.
  4. Remove the pot from the heat.

Step 3: Add Flavor and Cool

  1. Stir in 1 tablespoon of lemon juice, 2 tablespoons of butter, and 1/2 teaspoon of vanilla extract into the raisin filling.
  2. Allow the filling to cool slightly.

Step 4: Assemble the Pie

  1. Preheat your oven to 425°F (220°C).
  2. Place one of the prepared pie crusts into a pie dish. This will be the bottom crust.
  3. Pour the raisin filling into the pie crust.

Step 5: Create the Top Crust

  1. For the top crust, you can either use the second prepared pie crust directly or cut it into strips to create a lattice design or any decorative pattern you prefer. Place the top crust over the filling.

Step 6: Seal and Bake

  1. Seal the edges of the pie by pinching them together or using a fork.
  2. Use a knife to make a couple of slits in the top crust to allow steam to escape.

Step 7: Bake the Pie

  1. Bake the pie in the preheated oven for 30-35 minutes or until the crust is golden brown and the filling is bubbling.

Step 8: Serve and Enjoy

  1. Once baked, remove the pie from the oven and let it cool before serving.
  2. Slice the pie into wedges and enjoy your delicious homemade raisin pie!
