Meatloaf :

2 pounds of 90% lean ground beef

1 teaspoon of dried parsley

1 teaspoon Italian seasoning

1/2 teaspoon ground paprika

1/4 teaspoon red pepper flakes

1 tablespoon Worcestershire sauce

1/8 teaspoon ground black pepper

1/4 teaspoon kosher salt

1 small onion finely diced

1 tablespoon chopped garlic

1 cup plain bread crumbs

1 cup of milk

2 beaten eggs

1 cup grated cheddar cheese

Icing of meatloaf :

1/3 cup ketchup

1 tablespoon of tomato paste

3 tablespoons of brown sugar

1 teaspoon apple cider vinegar

2 tablespoons sweet chili sauce


Preheat the oven to 400 degrees F.

Cover a rimmed baking tray with aluminum foil. Spray lightly with oil. Set aside.

Prepare the meatloaf :

Mix all the ingredients of the “Meatloaf” in the order indicated until breadcrumbs. Stir well to mix, then add milk and beaten egg. Stir just enough to mix.

Add the cheddar cheese and stir again, but do not overbeat.

Shape the beef mixture into a loaf of bread and place on the prepared baking sheet.

Glaze the meatloaf :
Combine all glaze ingredients in a small bowl until well blended and set aside. Brush about half of the glaze over the entire meatloaf.
Bake in the oven :

Transfer the meatloaf to the oven and bake for about 45 minutes or until the inside temperature is 160 degrees. Brush the surface of the meatloaf with the remaining glaze and bake for an additional 15 minutes.

Once the meatloaf is cooked, let it cool for 10 to 15 minutes before slicing and serving.
