No Bake Salted Caramel Coconut Macaroons
“No Bake Salted Caramel Coconut Macaroons are a delightful twist on the classic macaroon, offering a combination of chewy coconut and the rich, buttery flavor of salted caramel.”
INGREDIENTS:
- ° 3 tbsp milk
- ° 6 tbsp salted butter
- ° 11 oz bag Kraft caramels*, wrappers removed
- ° 4–5 cups shredded sweetened coconut
- ° 4 oz melting chocolate, such as almond bark
- ° Sea salt
INSTRUCTIONS:
- In a large pot, combine the milk, butter, and caramels. Place the pot over medium heat. Stir frequently to ensure the mixture melts smoothly and doesn’t burn.
- Once the caramels are fully dissolved and the mixture is smooth, add the shredded coconut. Start with 4 cups of coconut and mix until the coconut is well coated with the caramel mixture. You can add additional coconut as needed to reach your preferred consistency. You want the mixture to be thoroughly mixed, but not overly wet.
- Using two large spoons or a scoop, drop spoonfuls of the mixture, approximately 1 to 1.5 tablespoons each, onto a parchment paper-lined baking sheet.
- Allow the macaroons to cool completely. They should become firm and hold their shape.
- In a small bowl, melt the chocolate following the instructions on the package. Typically, this involves melting it in the microwave or over a double boiler.
- Dip the bottom of each macaroon into the melted chocolate and then place it back on the parchment paper. Optionally, you can sprinkle a pinch of sea salt on top of the chocolate-covered macaroons.
- Let the chocolate set and the macaroons firm up completely. Once they are firm, you can serve and enjoy these delicious caramel coconut macaroons with a chocolate coating.
