No-Bake Lemon Pie

INGREDIENTS:

Pie Filling

  • 1 cup Sugar
  • 3 Tbsp. cornstarch plus 1-1/2 tsp
  • 1 Tbsp. grated lemon peel
  • 1/2 cup lemon juice
  • 3 egg yolks lightly beaten
  • 1 cup milk
  • 1/4 cup butter cubed
  • 8 oz. sour cream
  • 1 cup heavy whipping cream whipped
  • Lemon twists for garnish

Graham Cracker Crust

  • 1 1/4 cup graham cracker crumbs
  • 5 Tbsp. butter melted
  • 2 Tbsp. sugar

INSTRUCTIONS:

Pie Filling:

  1. In a heavy saucepan, combine sugar, cornstarch, lemon zest, lemon juice, egg yolks, and milk.
  2. Cook the mixture over medium heat until it thickens, and then stir in the butter.
  3. Let the mixture cool to room temperature, and then add the sour cream.
  4. Pour the filling into the Graham Cracker Crust.
  5. Top with Whipped Cream and garnish as desired.
  6. Refrigerate until you’re ready to serve.

Graham Cracker Crust:

  1. Mix graham cracker crumbs, melted butter, and sugar together using a fork.
  2. Pour the crumb mixture into a pie plate.
  3. Use a measuring cup to firmly press the crumbs into the bottom and sides of the pie plate.
  4. Bake at 325 degrees Fahrenheit until the crust begins to brown, which usually takes about 15-20 minutes.
  5. Allow the crust to cool, and store it in the refrigerator until needed.
