INGREDIENTS:

  • 8 oz of cream cheese, softened
  • 1 tablespoon of softened butter
  • 4 cups of powdered sugar, (icing sugar)
  • 1 cup of grated coconut
  • 1 bag (12 oz) of melting chocolate chips

INSTRUCTIONS:

  1. Start by lining your baking sheet with parchment paper and set it aside.
  2. In a medium bowl, use a hand mixer to beat together the cream cheese and butter until well blended.
  3. Gradually add the powdered sugar, and then incorporate the shredded coconut using a mixing spoon. Once combined, refrigerate the mixture for about 1 hour.
  4. Sprinkle your hands with powdered sugar to prevent sticking, and shape the coconut mixture into egg shapes.
  5. Place the coconut eggs on the prepared baking paper and freeze them for about 1 hour.
  6. Following the instructions on the package, melt the chocolate fondant.
  7. Dip each coconut egg into the melted chocolate using a fork. Make sure the egg is fully coated, and then transfer it to the parchment paper using a second fork.
  8. Refrigerate the chocolate-coated eggs for about 5-10 minutes to allow the chocolate to harden.
  9. Your coconut eggs are now ready to be served immediately or stored in an airtight container in the refrigerator until you’re ready to enjoy them.
