INGREDIENTS:
- 1 2/3 to 1 3/4 pounds ground sirloin
- 1 medium onion, cut into chunks
- 2 ribs celery from the heart of the stalk, cut into 2-inch pieces
- 1 green bell pepper
- 1 large egg plus a splash of milk, beaten
- 1 cup plain bread crumbs
- 2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
- 1 cup smoky barbecue sauce
- 1/2 cup tomato salsa
- 1 tablespoon Worcestershire sauce
- Vegetable oil or extra-virgin olive oil
INSTRUCTIONS:
Step 1: Preheat the Oven
- Preheat your oven to 450°F (230°C).
Step 2: Prepare the Meatloaf Mixture
- Place the ground beef in a large mixing bowl.
- In a food processor, combine the half onion, celery stalk, and half bell pepper. Pulse until they are finely chopped. Add these chopped vegetables to the ground beef.
- In a separate bowl, beat the egg and milk together. Add this mixture to the ground beef and vegetable mixture.
- Add the bread crumbs and grill seasoning to the bowl.
- In another small bowl, mix the smoky barbecue sauce, salsa, and Worcestershire sauce. You will use this sauce for both the meatloaf mixture and topping.
- Pour half of the sauce mixture into the meatloaf mixture.
Step 3: Combine the Ingredients
- Use your hands to combine all the ingredients in the mixing bowl. Mix until everything is well incorporated.
Step 4: Grease the Muffin Tin
- Grease a 12-cup muffin tin with vegetable oil or extra-virgin olive oil.
Step 5: Shape the Meatloaf Muffins
- Use an ice cream scoop to help you fill each muffin cup with the meatloaf mixture.
