INGREDIENTS:

  • 1 2/3 to 1 3/4 pounds ground sirloin
  • 1 medium onion, cut into chunks
  • 2 ribs celery from the heart of the stalk, cut into 2-inch pieces
  • 1 green bell pepper
  • 1 large egg plus a splash of milk, beaten
  • 1 cup plain bread crumbs
  • 2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
  • 1 cup smoky barbecue sauce
  • 1/2 cup tomato salsa
  • 1 tablespoon Worcestershire sauce
  • Vegetable oil or extra-virgin olive oil

INSTRUCTIONS:

Step 1: Preheat the Oven

  1. Preheat your oven to 450°F (230°C).

Step 2: Prepare the Meatloaf Mixture

  1. Place the ground beef in a large mixing bowl.
  2. In a food processor, combine the half onion, celery stalk, and half bell pepper. Pulse until they are finely chopped. Add these chopped vegetables to the ground beef.
  3. In a separate bowl, beat the egg and milk together. Add this mixture to the ground beef and vegetable mixture.
  4. Add the bread crumbs and grill seasoning to the bowl.
  5. In another small bowl, mix the smoky barbecue sauce, salsa, and Worcestershire sauce. You will use this sauce for both the meatloaf mixture and topping.
  6. Pour half of the sauce mixture into the meatloaf mixture.

Step 3: Combine the Ingredients

  1. Use your hands to combine all the ingredients in the mixing bowl. Mix until everything is well incorporated.

Step 4: Grease the Muffin Tin

  1. Grease a 12-cup muffin tin with vegetable oil or extra-virgin olive oil.

Step 5: Shape the Meatloaf Muffins

  1. Use an ice cream scoop to help you fill each muffin cup with the meatloaf mixture.

Step 6: Top with Sauce
