Everyone LOVES this easy to make and layer lemon dessert. I think one of the reasons for its popularity is that it is one of those classic desserts that are easy to make but take you right back to your childhood. A bit like my blueberry cheesecake without cooking.
Lemon Delight has been a family favourite for years. It often makes an appearance at family reunions and holiday parties, and it always goes fast.
It is a light and refreshing dessert that is always enjoyable after a big meal. And it’s so pretty.
1 cup flour
1/2 cup ground or finely chopped pecans
1/4 cup melted butter
Lemon Delight Layers :
8 oz cream cheese
2½ Thawed Cool Whip cups link to the homemade Cool Whip recipe below
2 small pkgs of instant lemon pudding of about 99 grams each
1 tablespoon of lemon juice optional for more acidity
3 cups of milk
1 cup powdered sugar aka powdered sugar or powdered sugar
3 tablespoons finely chopped pecans for garnish
Mix flour, chopped pecans and melted butter.
Make sure your pecans are ground or chopped very finely so that the crust holds together.
Mix until well blended and crumbly.
Press into a 9 x 13 baking dish.
Bake at 350ºF for 15 minutes and let cool completely.
Cream cheese and layer :
Using electric beaters, mix the cream cheese and powdered sugar until smooth and creamy.
Add a cup of Cool Whip and spread this mixture over the crust, working slowly if the crust crumbles easily.
Lemon Pudding Layer :
Whisk together the pudding packets and milk.
Add the lemon juice and continue to stir until the mixture is thick.
Spread the pudding mixture over the cream cheese layer.
Whisk the cream cheese layer :
Place the remaining Cool Whip on top of the pudding layer
Sprinkle with finely chopped pecans.
Refrigerate for 4 hours before serving.
