Lemon Butter Shortbread Cookies with Lemon Glaze

INGREDIENTS:
For the Cookies
- 4 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 cups (4 sticks) unsalted butter, room temperature
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
For the Lemon Glaze
- 3 cups powdered sugar
- 6 tablespoons unsalted butter, melted
- 1/3 to 1/2 cup fresh lemon juice
- Zest of 2 lemons
INSTRUCTIONS:
Preheat your oven to 350 degrees.
For the Cookies:
- Begin by sifting or whisking together the flour, salt, and baking powder in a medium bowl. Set this dry mixture aside.
- In a large mixing bowl, add the butter. Use a wooden spoon to mix the butter until it becomes very creamy.
- Next, add the powdered sugar, lemon juice, and the dry ingredients you set aside earlier. Mix everything until well combined.
- Roll out the cookie dough on a lightly floured surface until it reaches a thickness of 1/4 inch. Use a round cookie cutter to cut out cookie rounds.
- Place these rounds on ungreased cookie sheets and bake for approximately 10 minutes, or until the cookies are lightly browned on the bottoms and still pale on top.
- Allow the cookies to cool on the cookie sheet for about 2 minutes before transferring them to a wire rack to finish cooling.
For the Lemon Glaze:
- In a small bowl, whisk together the melted butter and lemon juice.
- Add the lemon zest to the mixture and whisk again.
- Gradually whisk in the powdered sugar, one cup at a time. Adjust the consistency by adding more lemon juice if needed until you have a thin glaze.
To complete the cookies:
