INGREDIENTS:

For the Cookies

  • 4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups (4 sticks) unsalted butter, room temperature
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

For the Lemon Glaze

  • 3 cups powdered sugar
  • 6 tablespoons unsalted butter, melted
  • 1/3 to 1/2 cup fresh lemon juice
  • Zest of 2 lemons

INSTRUCTIONS:

Preheat your oven to 350 degrees.

For the Cookies:

  1. Begin by sifting or whisking together the flour, salt, and baking powder in a medium bowl. Set this dry mixture aside.
  2. In a large mixing bowl, add the butter. Use a wooden spoon to mix the butter until it becomes very creamy.
  3. Next, add the powdered sugar, lemon juice, and the dry ingredients you set aside earlier. Mix everything until well combined.
  4. Roll out the cookie dough on a lightly floured surface until it reaches a thickness of 1/4 inch. Use a round cookie cutter to cut out cookie rounds.
