Jumbo Fluffy Walnut Apple Muffins

INGREDIENTS:

  • ½ cup butter
  • 1 ¼ cups white sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ cup milk
  • 2 cups peeled, cored, and sliced apples
  • ½ cup walnuts
  • ¼ cup white sugar
  • ½ teaspoon ground cinnamon
  • 3 tablespoons all-purpose flour
  • 2 tablespoons butter, cubed

INSTRUCTIONS:

Step 1: Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit).

Step 2: Prepare a jumbo muffin pan by either applying cooking spray or lining it.

Step 3: In a large mixing bowl, combine 1 1/4 cups of sugar, 1/2 cup of butter, vanilla, and a pinch of salt. Beat the mixture until it becomes creamy.

Step 4: Gradually add the eggs, one at a time, and beat the batter with each addition.

Step 5: In a separate mixing bowl, whisk together baking powder, 1/2 teaspoon of cinnamon, and 1 3/4 cups of flour until well mixed. Transfer this mixture into the batter and gradually add milk. Then, fold in the walnuts and apples.

Step 6: In another small mixing bowl, combine 1/2 teaspoon of cinnamon, 3 tablespoons of all-purpose flour, 2 tablespoons of cubed butter, and 1/4 cup of white sugar. Use a pastry blender or fork to mix until it forms a crumbly texture.

Step 7: Sprinkle the cinnamon crumble evenly on top of the batter.

Step 8: Place the muffin pan inside the preheated oven and bake for approximately 30 minutes. Check for a golden brown color and perform a toothpick test – if the toothpick comes out clean after inserting it into the center of a muffin, they are ready.

Step 9: Remove the muffins from the oven and allow them to cool on a wire rack at room temperature.

Step 10: Serve and enjoy your delicious muffins!
