Ingredients :
- 2 C. leftover mashed potatoes
- 2 T. diced onion
- 2 T. parmesan cheese
- 1/2 tsp. italian seasoning
- 1/8 tsp. garlic powder
- 1 large egg, lightly beaten
- 1/4 – 1/3 C. all purpose flour
- vegetable oil for frying
Directions :
- In a mixing bowl, combine the potatoes, onion, cheese and seasonings.
- Stir in the egg and combine well. Stir in 1/4 C. flour and add a little more, if needed, to tighten up the potatoes (not overly stiff though).
- Heat 1/4″ of oil in a skillet over med. high heat.
- Drop the potato mixture by big spoonfuls in to the oil and gently flatten out just a little.
- Fry for 2-3 minutes per side until golden brown.
- Remove to a paper sack or paper towel lined plate.
