Italian Potato Cakes

Ingredients :

  • 2 C. leftover mashed potatoes
  • 2 T. diced onion
  • 2 T. parmesan cheese
  • 1/2 tsp. italian seasoning
  • 1/8 tsp. garlic powder
  • 1 large egg, lightly beaten
  • 1/4 – 1/3 C. all purpose flour
  • vegetable oil for frying

Directions :

  1. In a mixing bowl, combine the potatoes, onion, cheese and seasonings.
  2. Stir in the egg and combine well. Stir in 1/4 C. flour and add a little more, if needed, to tighten up the potatoes (not overly stiff though).
  3. Heat 1/4″ of oil in a skillet over med. high heat.
  4. Drop the potato mixture by big spoonfuls in to the oil and gently flatten out just a little.
  5. Fry for 2-3 minutes per side until golden brown.
  6. Remove to a paper sack or paper towel lined plate.
