Instant Pot Cabbage, Sausage, and Potato Soup

INGREDIENTS:

  • 1 medium head cabbage (roughly cut)
  • 1 cup water or chicken broth (the cabbage will produce more liquid as it cooks)
  • 1 package your favourite smoked sausage, cut into 1-inch pieces
  • 4 – 5 medium potatoes (peeling optional) cut into 1 1/2-inch cube
  • 1 medium onion, halved and then cut into 1/2” slices
  • 1 Tablespoon minced garlic
  • 1 stick butter or margarine
  • 1/8 teaspoon cayenne pepper (or to taste, optional)
  • 2 teaspoons garlic salt with parsley (or to taste)
  • 2 teaspoons black pepper (or to taste)

INSTRUCTIONS:

  1. Place the pot into the base of your electric pressure cooker.
  2. In a small mixing bowl, whisk together garlic salt, cayenne pepper, and black pepper to create a spice mixture.
  3. Place the cabbage on the bottom of the pressure cooker liner.
  4. Pour in some water over the cabbage.
  5. Top the cabbage with 4 tablespoons of butter.
  6. Season with about 1 teaspoon of the prepared spice mixture.
  7. Add the smoked sausage into the pressure cooker.
  8. Follow by adding onion, minced garlic, and potatoes.
  9. Season everything with the rest of the spice mixture.
  10. Top everything with the last 4 tablespoons of butter.
  11. Cover the pressure cooker and set it to the “sealing” setting.
  12. Press the “Manual/Pressure Cook” button and set the timer to about 8 minutes.
  13. Do a quick release when the cooking is finished.
  14. Serve and enjoy your cabbage and smoked sausage dish!
