INGREDIENTS:

  • 3 cups frozen hash brown potatoes
  • 3/4 cup shredded pepperjack cheese
  • 1 cup cooked ham, diced
  • 1/4 cup chopped green onions
  • 4 eggs, beaten
  • 1 (12 fluid ounce) can evaporated milk
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon salt

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish.
  2. Evenly arrange the hash brown potatoes in the bottom of the prepared baking dish.
  3. Sprinkle the hash brown potatoes with the pepper jack cheese, ham, and green onions.
  4. In a medium-sized bowl, combine the eggs, evaporated milk, salt, and pepper.
  5. Pour the egg mixture over the potato mixture in the dish. If you prefer, you can prepare the dish up to this point, cover it, and refrigerate it for several hours or overnight.
  6. Bake the casserole for 40 to 45 minutes (or 55 to 60 minutes if you’ve prepared it ahead and it’s chilled) in the preheated oven. The casserole is ready when a knife inserted into the center comes out clean.
  7. Let the casserole stand for 5 minutes before serving.
