INGREDIENTS:
- 1 ½ pounds chicken breast, pounded to even thickness
- 2 eggs
- 2 tablespoons water
- ½ cup corn starch
- ¼ cup all-purpose flour
- ½ cup crushed pineapple
- 1 chili pepper, seeded and finely diced OR 1 bell pepper, seeded and diced
- ½ yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- ½ cup apple cider vinegar
- 3 tablespoons honey
- ⅓ cup brown sugar
- ¼ cup low-sodium soy sauce
- 3 tablespoons ketchup
- 1 teaspoon red pepper flakes, optional
- 3 tablespoons cooking oil
- 1 tablespoon finely chopped cilantro, garnish
INSTRUCTIONS:
- Begin by whisking together honey, brown sugar, apple cider vinegar, ketchup, soy sauce, ginger, garlic, and crushed pineapple in a small bowl. Set this sauce aside for later use.
- In a separate step, combine cornstarch and flour in a large plastic bag. Set this bag aside.
- Take a shallow dish and beat the eggs, combining them with 2 tablespoons of water. Dredge the chicken breasts in the egg mixture, ensuring they are evenly coated.
- Next, transfer the egg-coated chicken breasts to the plastic bag containing the flour mixture. Shake the bag to ensure the chicken is well coated with the flour mixture.
- In a large skillet, heat 2 tablespoons of oil over medium-high heat. Cook the chicken breasts for approximately 4 minutes on each side until they achieve a golden brown color. Once done, remove the chicken from the skillet and set it aside.
- In the same skillet, heat an additional 1 tablespoon of oil. Sauté either the chili pepper or bell pepper, along with the onion, until they become softened.
- Pour in the prepared soy sauce mixture and stir until it thickens. You can add red pepper flakes at this point if you prefer a bit of heat.
- Return the cooked chicken to the skillet and toss it in the sauce.
