EASY MINI CHICKEN POT PIES RECIPE

INGREDIENTS:

  • 3/4 cup chopped leftover chicken or 1 small fresh chicken breast, fully cooked
  • 1 can cream of chicken soup
  • 1 cup mixed frozen vegetables (peas, carrots, corn, and green beans), defrosted
  • 1 package refrigerated biscuit dough

INSTRUCTIONS:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a medium bowl, combine the cooked chicken, mixed vegetables, and cream of chicken soup. Stir well to combine.
  3. Prepare the Biscuits:
    • Grease the compartments of a muffin tin.
    • Take the refrigerated biscuits and separate each biscuit.
    • Place each biscuit into a compartment of the muffin tin.
  4. Form the Crusts:
    • Use your fingers to shape the biscuit dough into crusts. Press the dough down starting in the middle and working it up the sides of each muffin compartment as high as it will go, creating a well for the filling.
  5. Add the Filling:
    • Spoon approximately 2 tablespoons of the prepared filling into each of the biscuit crusts.
  6. Bake:
    • Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until the mini chicken pot pies are golden brown and bubbly.
