Easy Creme Brulee Cheesecake Bars

INGREDIENTS:

For the crust:

  • 200g (7oz) Graham crackers/biscuits
  • 90g (6 Tbsp) Butter, melted

For the filling:

  • 2½ cups (560g) Cream cheese, room temperature
  • 2/3 cup (160g) Sour cream
  • 1/4 cup (60ml) Heavy cream
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup (200g) Sugar

For the topping:

  • 6-8 teaspoons sugar

INSTRUCTIONS:

  1. Start by preheating your oven to 325°F (160°C).
  2. Begin with the crust. In a food processor or a Ziploc bag, crush the cookies into fine crumbs. Add the melted butter and pulse (or mix in the bag) until well combined. Press this mixture into a 9×9-inch (22x22cm) square pan or a 20x25cm rectangle pan that is lined with parchment paper. Bake the crust for 7-10 minutes, then set it aside while you work on the filling.
  3. In a large bowl, beat the cream cheese and sugar together until the mixture is smooth. Add the vanilla extract, sour cream, and heavy cream, continuing to beat until the mixture is smooth. Add the eggs, one at a time, beating well after each addition.
  4. Pour this cream cheese mixture over the baked crust in the pan. Bake for 35-40 minutes or until the center is almost set. After baking, allow it to cool to room temperature for about an hour, then refrigerate it for at least 4 hours.
  5. Once chilled, release the cheesecake from the pan and optionally trim the edges. Cut the cheesecake into bars.
  6. Just before serving, sprinkle about 1/2 teaspoon of sugar on top of each bar. Then, use a torch to brûlée the sugar until it caramelizes. Let the bars sit for about 5 minutes before serving.
