Ingredients
CAKE :
2 cups all-purpose flour
2 teaspoons baking soda
2 cups of sugar
2 eggs
1/2 teaspoon vanilla extract
2 1/2 cups (20 oz) crushed pineapple, undrained
FROSTING :
1 stick of butter, 113 g
3/4 cup evaporated milk
1 cup of sugar
1 cup chopped nuts
1 cup of grated coconut
Instructions
CAKE: Mix all cake ingredients with a spoon. Pour into an oiled 23×33 cm (9×13 inch) baking pan and bake at 175°C (350°F) for 30 to 40 minutes or until the center of the cake is cooked.
While the cake is still warm, prick it with a skewer to help the icing soak into the cake. Immediately pour the icing over the cake.
ICEING: Cook butter, evaporated milk and sugar until thickened, about 5 minutes, stirring often. Add walnuts and coconut.
