RECIPE :

CRACKER BARREL MEATLOAF

INGREDIENTS:

  • 32 Ritz Biscuits, I crushed them before using.
  • 1½ Lbs.Of ground beef.
  • ½ Cup.Of ketchup.
  • ½ Cup.Of brown sugar.
  • 2 medium eggs.
  • ⅔ Cup.Of milk.
  • ½ Cup.Of chopped white onion.
  • Shredded sharp cheddar cheese, I used approximately 4-oz.
  • 1 small spoon.Of salt.
  • ¼ small spoon.Of ground pepper.
  • 1 small spoon.Of dijon mustard.

INSTRUCTIONS:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a medium mixing bowl, beat the eggs with a hand mixer.
  3. Place biscuits in a food processor and pulse until finely crushed. Add crushed biscuits, 2/3 cup of milk, and eggs to the bowl. Mix thoroughly.
  4. Stir in chopped onions and shredded cheese.
  5. Add ground meat and mix until all ingredients are well incorporated.
  6. Shape the mixture into a loaf and place it in a lined large baking dish.
  7. Bake for approximately 30 minutes at 350 degrees.
  8. While the meatloaf is baking, mix ketchup with brown sugar and Dijon mustard in a separate bowl.
  9. After the initial baking, remove the meatloaf from the oven, coat it with the glaze, and bake for an additional 20 to 25 minutes. Check for doneness with a food thermometer (160 degrees F).
