RECIPE :
CRACKER BARREL MEATLOAF
INGREDIENTS:
- 32 Ritz Biscuits, I crushed them before using.
- 1½ Lbs.Of ground beef.
- ½ Cup.Of ketchup.
- ½ Cup.Of brown sugar.
- 2 medium eggs.
- ⅔ Cup.Of milk.
- ½ Cup.Of chopped white onion.
- Shredded sharp cheddar cheese, I used approximately 4-oz.
- 1 small spoon.Of salt.
- ¼ small spoon.Of ground pepper.
- 1 small spoon.Of dijon mustard.
INSTRUCTIONS:
- Preheat your oven to 350 degrees Fahrenheit.
- In a medium mixing bowl, beat the eggs with a hand mixer.
- Place biscuits in a food processor and pulse until finely crushed. Add crushed biscuits, 2/3 cup of milk, and eggs to the bowl. Mix thoroughly.
- Stir in chopped onions and shredded cheese.
- Add ground meat and mix until all ingredients are well incorporated.
- Shape the mixture into a loaf and place it in a lined large baking dish.
- Bake for approximately 30 minutes at 350 degrees.
- While the meatloaf is baking, mix ketchup with brown sugar and Dijon mustard in a separate bowl.
- After the initial baking, remove the meatloaf from the oven, coat it with the glaze, and bake for an additional 20 to 25 minutes. Check for doneness with a food thermometer (160 degrees F).
