Chestnut Stuffing
INGREDIENTS:
- 18 ounces Day-Old Cornbread – cut into ¾-inch cubes (about 8 cups)
- 8 ounces Roasted & Peeled Chestnuts – coarsely chopped (about 1 1/2 cups)
- Salt & Ground Black Pepper
- 5 1/2 TBS Unsalted Butter – DIVIDED
- 1 small Yellow Onion – small dice (about 1 1/4 cup)
- 2 large Ribs Celery – small dice (about ¾ cup)
- 16 ounces Sausage
- 2-3 cloves Garlic – minced, to taste
- 1 heaping TBS fresh Thyme Leaves – chopped
- 2 heaping TBS fresh Flat Leaf Parsley – chopped
- 1 heaping TBS fresh Rosemary Leaves – chopped
- 1 1/2 – 2 Cups Reduced-Sodium Chicken Stock – DIVIDED
- 2 large Eggs
- parsley and/or thyme (Optional)
INSTRUCTIONS:
- Preheat Oven: Preheat to 400°F, then toast cornbread cubes until golden (8-10 mins). Grease an 8×11” baking dish.
- Saute Chestnuts: Melt 1.5 tbsp butter, sauté chestnuts until golden. Transfer to a bowl.
- Sauté Vegetables: In the same pan, melt 2 tbsp butter, sauté onions and celery until softened.
- Add sausage, cook until brown. Add garlic, thyme, parsley, and rosemary. Remove from heat, stir in ½ cup stock.
- Whisk Wet Ingredients: Whisk 1 cup chicken stock with eggs.
- Combine Ingredients: Pour egg mixture over sausage mixture. Add toasted cornbread, fold until combined.
- Bake Covered: Transfer to the baking dish, cover with foil, and bake for 30 mins.
- Brush with Butter, Bake Uncovered: Remove foil, brush with melted butter, bake uncovered for 20-30 mins until golden and crisp.
- Cool and Serve: Cool for 5 mins, sprinkle with fresh herbs, and serve.
