Cherry Cheesecake Layered Dessert

Cherry Cheesecake Layered Dessert

INGREDIENTS:

  • 2 packages shortbread cakes (or 1 Angel food cake)
  • 2 (8 oz.) packages cream cheese, softened (can use fat free)
  • 1 (16 oz.) container sour cream (can use low fat)
  • 2 sm. boxes vanilla instant pudding (can use fat free/sugar free)
  • 1 large can cherry pie filling

INSTRUCTIONS:

  1. Prepare the pudding according to the directions on the box and let it chill.
  2. In a separate large bowl, mix together cream cheese and sour cream until smooth.
  3. Fold in the chilled pudding and blend on low speed until the mixture is smooth.
  4. Cut the bread into 1/2-inch pieces and cover the bottom of a 9×13-inch pan.
  5. Pour the cream mixture over the bread, smoothing it out evenly.
  6. Top the mixture with spoonfuls of cherry pie filling. Use a knife to swirl the pie filling through the cream filling for a decorative effect.
