Caramel Apple Toffee Cake

INGREDIENTS:

  • 1 box vanilla cake mix
  • 1 tablespoon apple pie spice
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 20-ounce package apple pie filling, coarsely chopped
  • 1 cup caramel sauce, room temperature or slightly warm
  • 1 8-ounce container, skin-covered, thawed
  • 2/3 cup chopped toffee

INSTRUCTIONS:

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Spray a 9×13-inch baking pan with non-stick cooking spray.
  3. In a large bowl, using an electric mixer, beat together the cake mix, apple pie spice, water, oil, eggs, and vanilla on medium speed for approximately 2 minutes.
  4. Carefully fold the apple pie filling into the cake batter using a rubber spatula.
  5. Pour the prepared cake batter into the greased baking pan.
  6. Bake the cake in the preheated oven for about 28-33 minutes or until a toothpick inserted into the center comes out clean.
  7. Once the cake is done, transfer it to a wire rack and allow it to cool for about 10 minutes.
  8. While the cake is still warm, use a straw or similar item to poke holes into the cake at intervals, about every inch or so, going halfway into the cake.
  9. Pour 3/4 cup of the caramel sauce over the cake, allowing it to fill the holes. Let the cake cool completely.
  10. Once the cake has cooled, cover it with the whipped topping, sprinkle with toffee pieces, and drizzle the remaining 1/4 cup of caramel sauce over the top.
  11. If there are any leftovers, cover the caramel apple cake and refrigerate it for up to 3 days.
