The Big Boy Strawberry Pie

“The Big Boy Strawberry Pie is a true summertime sensation, featuring plump and juicy strawberries nestled in a sweet glaze, all housed in a flaky pie crust.”

INGREDIENTS:

PIE CRUST:

  • 1 cup all-purpose flour
  • 4 ounces butter at room temperature
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

STRAWBERRY PIE FILLING:

  • 1 cup water
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 1/4 teaspoon red food coloring
  • 1 quart strawberries rinsed, stemmed, and dried
  • 1 pint whipped cream for garnish

INSTRUCTIONS:

For the Pie Crust:

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a mixing bowl, combine the flour, butter, powdered sugar, and vanilla.
  3. Mix these ingredients well until you have a dough.
  4. Press the dough into the bottom and up the sides of a 9-inch pie pan. Make sure it’s evenly distributed.
  5. Prick the crust all over with a fork to prevent it from puffing up during baking.
  6. Bake the crust in the preheated oven for about 10 to 15 minutes or until it’s lightly browned.
  7. Remove the crust from the oven and allow it to cool completely.

For the Strawberry Pie Filling:

  1. While the crust is baking, you can prepare the strawberry pie filling.
  2. In a small saucepan, combine the water, granulated sugar, salt, cornstarch, and food coloring.
  3. Cook this mixture over medium heat, stirring constantly, for approximately 5 minutes or until it thickens. This is your glaze.
  4. Once the glaze has thickened, set it aside to cool.

Assembling the Pie:

  1. Once the pie crust has cooled, pile the fresh strawberries into the crust. Arrange them evenly.
  2. Pour the thickened glaze over the top of the strawberries.
  3. Make sure the glaze covers the strawberries evenly.
  4. Refrigerate the pie until the glaze is fully set. This will take some time, so be patient.
  5. Before serving, you can add a dollop of whipped cream or whipped dessert topping for extra deliciousness.
