Big apple fritters

“Whether enjoyed as a morning treat or a dessert, these fritters are sure to bring warmth and sweetness to any occasion.”

INGREDIENTS:

  • 3 cups all-purpose flour
  • 1½ cups sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ teaspoon Apple Pie Spice
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 Tablespoons butter, softened
  • 1½ cups peeled, chopped apples
  • Oil for frying
  • Confectioners sugar

INSTRUCTIONS:

  1. Begin by pouring oil into a deep skillet or Dutch oven, ensuring it reaches a depth of approximately 3 inches.
  2. Heat the oil to 375 degrees.
  3. In a large mixing bowl, sift together flour, sugar, salt, and Apple Pie Spice.
  4. In a separate bowl, lightly beat eggs, then stir in milk and vanilla.
  5. Create a well in the center of the dry ingredients and pour in the milk mixture. Add butter and beat with a mixer on low speed for about 1/2 minute to moisten. Scrape down the sides of the bowl and increase the speed to medium for an additional 2 minutes.
  6. Fold in the apples. Using a 1/4 cup measuring cup, carefully drop portions into the hot oil, taking care to avoid splashing. Depending on the size of your pot, you may be able to cook only one at a time. As the fritters cook, they will rise to the top.
  7. Once browned on one side, use a spatula to carefully turn them over and brown the second side.
  8. Drain the cooked fritters on paper towels and immediately sprinkle generously with confectioner’s sugar or glaze. If you prefer glaze, whisk together confectioner’s sugar and milk or water, and apply the glaze while the fritters are still warm.
