INGREDIENTS:

  • 4cups thinly sliced potatoes
  • 3tablespoons butter
  • 3tablespoons flour
  • 1 1⁄2cups milk
  • 1teaspoon salt
  • 1dash cayenne pepper
  • 1cup grated sharp cheddar cheese
  • 1⁄2cup grated cheese, to sprinkle on top

INSTRUCTIONS:

  1. In a small saucepan, melt the butter and blend in the flour. Allow this mixture to sit for a minute.
  2. Gradually add all of the cold milk, stirring constantly with a whisk.
  3. Season the sauce with salt and a pinch of cayenne.
  4. Cook the sauce on low heat until it becomes smooth and starts to boil, making sure to stir occasionally with a whisk.
  5. Reduce the heat and stir in the cheese until it is fully melted and the sauce is well blended.
  6. Begin assembling the dish by placing half of the sliced potatoes in a lightly greased one-quart casserole dish.
  7. Pour half of the cheese sauce over the first layer of potatoes.
  8. Repeat this process with the second layer of potatoes and the remaining cheese sauce.
  9. Sprinkle the remaining cheese on top for an extra cheesy touch.
  10. To add a pop of color, sprinkle some paprika over the dish.
  11. Bake the casserole uncovered for approximately 1 hour at 350°F, until it’s beautifully golden and bubbling.
