INGREDIENTS:
- 4cups thinly sliced potatoes
- 3tablespoons butter
- 3tablespoons flour
- 1 1⁄2cups milk
- 1teaspoon salt
- 1dash cayenne pepper
- 1cup grated sharp cheddar cheese
- 1⁄2cup grated cheese, to sprinkle on top
INSTRUCTIONS:
- In a small saucepan, melt the butter and blend in the flour. Allow this mixture to sit for a minute.
- Gradually add all of the cold milk, stirring constantly with a whisk.
- Season the sauce with salt and a pinch of cayenne.
- Cook the sauce on low heat until it becomes smooth and starts to boil, making sure to stir occasionally with a whisk.
- Reduce the heat and stir in the cheese until it is fully melted and the sauce is well blended.
- Begin assembling the dish by placing half of the sliced potatoes in a lightly greased one-quart casserole dish.
- Pour half of the cheese sauce over the first layer of potatoes.
- Repeat this process with the second layer of potatoes and the remaining cheese sauce.
- Sprinkle the remaining cheese on top for an extra cheesy touch.
- To add a pop of color, sprinkle some paprika over the dish.
- Bake the casserole uncovered for approximately 1 hour at 350°F, until it’s beautifully golden and bubbling.
