Baked Chicken Parmesan

INGREDIENTS:

  • 2 chicken cutlets
  • 1 egg white
  • 1 tablespoon of cornstarch
  • 1 teaspoon lemon juice
  • 0.5 cup of breadcrumbs (one package of mixed crackers)
  • 1 tablespoon dehydrated parsley
  • 0.5 teaspoon of salt
  • a pinch of pepper
  • 40 g of grated parmesan cheese
  • olive oil

INSTRUCTIONS:

Step 1: Prepare the Egg White Mixture

  1. In a large bowl, whisk the egg white with the cornstarch and lemon juice.

Step 2: Prepare the Breadcrumb Mixture 2. In a soup plate, mix breadcrumbs, chopped fresh parsley, and Parmesan cheese. Season with salt and pepper.

Step 3: Bread the Chicken 3. Dip the chicken breasts in the egg white mixture, ensuring they are coated evenly.

Step 4: Coat with Breadcrumb Mixture 4. Transfer the chicken breasts to the breadcrumb mixture. Press the breadcrumbs onto the chicken breasts with your fingertips, ensuring they are well coated, even if they don’t stick perfectly at this stage.

Step 5: Rest the Breaded Chicken 5. Carefully place the breaded chicken breasts on a plate and leave them at room temperature for about 15 minutes. This rest helps the breading adhere better.

Step 6: Preheat the Oven 6. Preheat the oven to 210°C (approximately 410°F) or equivalent to th 7 on your oven settings.

Step 7: Cook the Chicken in a Frying Pan 7. Heat a little olive oil in a frying pan over medium heat. Once the oil is hot, add the breaded chicken cutlets. Cook until the breading is golden brown, about 3 minutes on each side. Be careful when flipping them over as the breading may not have fully adhered yet.

Step 8: Transfer to Ovenproof Dish 8. Remove the pan from the heat and place the browned chicken cutlets in an ovenproof dish.

Step 9: Continue Cooking in the Oven 9. Continue cooking the chicken in the preheated oven for 10 to 15 minutes, depending on the size of the cutlets. This will ensure the chicken is fully cooked and the breading is crispy.
