  • 4 large burrito-size flour tortillas
  • ½ cup refried beans
  • 1 cup guacamole (optional, but highly recommended!)
  • 2 cups shredded chicken (see recipe below for the easy slow cooker chicken I used!)
  • 1 cup shredded Mexican style cheese (cheddar, Monterey, jack cheese, use your favorite!)
  • oil or cooking spray
  • optional: additional guacamole, salsa

INSTRUCTIONS:

  1. Preheat and Prepare:
    • Preheat your oven to 425°F (220°C).
    • Grease a baking sheet, ensuring it’s ready for use.
  2. Assemble the Burritos:
    • Lay out your tortillas on a flat surface to work on.
    • Spread a layer of refried beans in the center of each tortilla.
    • Add a generous dollop of guacamole on top of the beans.
    • Layer shredded chicken and then shredded cheese onto each tortilla.
  3. Roll and Arrange:
    • Carefully roll each tortilla into a burrito, folding in the sides as you go.
    • Place the prepared burritos on the greased baking sheet.
  4. Prep for Baking:
    • To enhance the crispiness, you can either spray the burritos generously with cooking spray or brush them with oil, ensuring an even coat.
  5. Bake to Perfection:
    • Bake the burritos in the preheated oven for 15-20 minutes, or until the tortillas turn a lovely golden brown and become crispy.
