Apple Sausage Stuffing

INGREDIENTS:

  • 1/4 cup butter, salted
  • 1 onion, diced
  • 1 cup celery, chopped
  • 1 Honeycrisp apple, chopped
  • 1 lb brioche bread, cubed
  • 1 1/2 cups chicken stock
  • 1 lb sweet Italian sausage, casings removed
  • 2 eggs
  • 1 1/2 tsp ground sage
  • 1 tsp thyme
  • 1/2 tsp rosemary
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh Thyme

INSTRUCTIONS:

  1. Prepare Bread Cubes: Preheat the oven to 250 degrees. Cut the brioche loaf into approximately 1/2-inch cubes. Arrange the cubes in a single layer on a baking tray (you may need two trays). Bake for about 45 minutes until the cubes are crunchy and dry, resembling croutons. This step can be done ahead of time.
  2. Prepare Ingredients: Preheat the oven to 350 degrees. Dice the onion and chop the celery and apple.
  3. Sauté Vegetables: In a large pan over medium heat, add the diced onion, chopped celery, and butter. Sauté for 8-10 minutes until the vegetables are soft and fragrant. Add the chopped apple and sauté for an additional 5 minutes. Remove the sautéed veggies from the pan and set aside.
