INGREDIENTS:
- 1 can apple pie filling, mashed
- 1 yellow cake mix
- 4 eggs, slightly beaten
- 1 cup self rising flour
- 1 Tbsp cinnamon
- 1 medium chopped apple
INSTRUCTIONS:
- Preheat your oven to 325°F (165°C) and grease two 9×5-inch loaf pans.
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
- In another bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next one. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Gently fold in the chopped apples.
- Divide the batter evenly between the two greased loaf pans.
- If desired, sprinkle some granulated sugar and ground cinnamon on top of the batter in each pan for added flavor and a sweet crust.
