DELICIOUS COCONUT CAKE

YOU’LL NEED:

• 1 LARGE can Of crushed pineapple.
• 1 C. and half of {softened} margarine.
• 3 C. Of sugar.
• 5 large eggs.
• 1/2 C. Of lemon-lime soft drink.
• 3 C. Of cake flour-sifted-
• 1 TSP.Of lemon extract.
• 1 TSP.Of vanilla extract.
• Pineapple Filling
• Cream Cheese Frosting.
• 1 large PKG.Of frozen flaked coconut.

METHOD:

• Step 1_Grease Three {9″} round cakepans on the bottom and sides, and cover bottoms with wax paper. then Grease the wax paper too and sprinkle some flour.
• Step 2_Drain ananas, reserve 3/4 cup juice. Drop 1/4 cup of Cream Cheese Frozen reserved juice and set aside Pineapple Filling with mashed pineapple.
• Step 3_Beat the butter until smooth at medium speed with an electric mixer, add the sugar gradually and beat well.
• Step 4_Add the eggs, one by one, beating after each addition until blended.
• Step 5_Combine the 1/2 cup of pineapple juice reserved and the soft drink. Alternately, add flour to the butter mixture with the juice mixture, starting and finishing with the flour.
Following each addition, beat at low speed before blended.
• Step 6_Stir the extracts in, beat well, and pour the batter into the pans.
• Step 7_For 30 minutes, bake the cake at 350 °.
Remove directly from the pans, and let them cool on wire racks.
• Step 8_Spread 3/4 cup Pineapple Filling on top of cake between layers of cake and remaining filling.
• Step 9_Spread Cream Cheese Frosting on cake sides, if needed, pipe border across the top.
