Ingredients:

  • 2 English Cucumbers
  • 1 cup Sour Cream
  • 2 tablespoons Freshly Chopped Dill
  • 2 tablespoons White Vinegar
  • 1 teaspoon Salt
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Sugar

Instructions:

  1. Begin by preparing the cucumbers. Rinse them under cold water and pat dry. Trim off the ends, then thinly slice the cucumbers into rounds, approximately ¼ inch thick. Peeling the cucumbers is optional, as English cucumbers have tender skin.
  2. Place the sliced cucumbers in a large mixing bowl and sprinkle salt over them. Toss to ensure even distribution of the salt. Let them sit for about 15 minutes. This process helps extract excess water from the cucumbers, enhancing their crispness in the salad and preventing the dressing from becoming diluted while chilling.
  3. While the cucumbers are resting, prepare the creamy dressing. In a small bowl, combine the sour cream, chopped dill, white vinegar, garlic powder, and sugar. Stir until thoroughly combined.
  4. After 15 minutes, drain off any excess water released by the cucumbers.
  5. Pour the sour cream dressing over the cucumbers and toss until evenly coated.
  6. Taste the salad and adjust seasoning if necessary, adding more salt, sugar, or vinegar to suit your preference.
  7. The salad can be served immediately, but for optimal flavor, cover and refrigerate for at least an hour before serving. Chilling allows the flavors to meld and the cucumbers to absorb the creamy dressing.
  8. Enjoy your creamy cucumber salad as a refreshing side dish, especially on warm summer days!
