Chicken Vegetable Soup

Ingredients

  • 2cups chopped chicken meat
  • 2tablespoons butter or 2 tablespoons margarine
  • 1cup chopped onion
  • 1cup chopped celery
  • 1tablespoon chopped green pepper
  • 1tablespoon minced garlic
  • 6cups chicken broth
  • 2chicken bouillon cubes
  • 12teaspoon thyme
  • 12teaspoon pepper
  • 1cup diced potato
  • 14cup diced carrot
  • 12cup light cream

Directions

  1. In soup pot, saute chicken in butter for 3 minutes.
  2. Add onion, celery, green pepper and garlic.
  3. Saute for another 3 minutes.
  4. Add broth, boullion, thyme and pepper.
  5. Bring to a boil.
  6. Add potatoes and carrots.
  7. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
  8. Remove from heat; quickly stir in cream.
