INGREDIENTS:
- 1 medium cauliflower, separated into florets
- 1 medium carrot, finely grated
- 1/4 cup diced celery
- 2 1/2 cups water
- 2 teaspoons chicken bouillon or 1 vegetable bouillon cube
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/8 teaspoon pepper
- 3/4 teaspoon salt
- 2 cups 2% milk
- 1 cup shredded cheddar cheese
- 1/2 to 1 teaspoon optional hot pepper sauce
INSTRUCTIONS:
- In a large pot, combine the cauliflower florets, grated carrot, diced celery, water, and bouillon. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 12-15 minutes or until the vegetables are tender. Do not drain.
- In a separate large saucepan, melt the butter over medium heat. Stir in the flour, salt, and pepper until you have a smooth paste. Gradually pour in the milk, whisking constantly. Bring the mixture to a boil and continue to cook and stir for about 2 minutes until it thickens.
