Cajun Chicken Alfredo with Broccoli

INGREDIENTS:

  • Salt
  • 1 pound penne or other small pasta
  • 2 cups broccoli florets
  • 1 pound boneless, skinless chicken breast cutlets
  • 2-3 tablespoons Cajun seasoning (see notes)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 cups heavy cream
  • 2 cups (8 ounces) Wisconsin parmesan cheese, shredded
  • Salt and pepper

INSTRUCTIONS:

  1. Start by preheating your oven to 200°F.
  2. In a large pot, bring 4 quarts of salted water to a boil.
  3. Add the pasta and cook until it reaches the al dente stage, which takes about 9 minutes. Once done, drain the pasta, making sure to reserve some of the cooking water, and set the pasta aside.
  4. Now, bring the reserved cooking water back to a boil. Add the broccoli and boil it for approximately 2 minutes, just until it’s tender and turns a vibrant green. Immediately transfer the boiled broccoli to a bowl of ice water, then drain and set it aside.
  5. While the broccoli is cooling, generously sprinkle Cajun seasoning on both sides of the chicken.
  6. In a large skillet, heat the oil until it shimmers. Arrange the seasoned chicken in a single layer and sauté it, flipping once, until the internal temperature reaches 155°F on an instant-read thermometer. This usually takes about 5 minutes per side. After sautéing, remove the chicken from the skillet, cover it with foil, and transfer it to the preheated oven to keep warm.
  7. Wipe the skillet with a paper towel and return it to the stove. Over medium-high heat, melt the butter and heat it until it begins to foam. Stir in the garlic and sauté until it becomes fragrant, which takes about 30 seconds.
  8. Next, whisk in the wine and bring it to a simmer. Let it simmer until the sauce has reduced by half, approximately 2 minutes.
  9. After that, whisk in the cream and let it simmer until it slightly thickens, which also takes about 2 minutes. Fold in the parmesan cheese and season the sauce with salt and pepper.
  10. Now, add the reserved pasta to the skillet and gently toss to coat it with the creamy sauce. Arrange the blanched broccoli over the pasta and top it with the cooked chicken. If desired, garnish with additional parmesan cheese.
  11. Your Cajun Chicken Alfredo with Broccoli is ready to be served immediately.
