INGREDIENTS:
- 4-6 boneless, skinless chicken breasts
- 1 can (8 oz.) crushed pineapple, drained
- 1 bottle (16 ounces) barbeque sauce
INSTRUCTIONS:
- Prepare the Chicken: Place the boneless, skinless chicken breasts in a greased 3.5-5 quart slow cooker.
- Combine Pineapple and BBQ Sauce: In a separate bowl, combine the drained crushed pineapple and the BBQ sauce.
- Pour Mixture Over Chicken: Pour the pineapple and BBQ sauce mixture over the chicken in the slow cooker.
- Cook on Low or High:
- Cook on high heat for 3-4 hours or on low heat for 6-8 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and is tender enough to be easily shredded.
- Shred the Chicken: Once the chicken is cooked, you can shred it using two forks right in the crockpot. It should easily fall apart.
- Serve: Serve the Pineapple BBQ Chicken over cooked rice. You can also serve it in sandwiches, wraps, or as a topping for salads.
